Seafood Casserole Recipe

If you love seafood I think you will enjoy this casserole.
You can use individual casserole dishes or a large casserole dish.
I used 1 pound of haddock or any white fish
1 pound of scallops ( if using large scallops, cut into pieces)
1 pound of uncooked shrimp (deveined and tails and shells removed). If I can't find fresh large shrimp I use Emeril's frozen shrimp found in the frozen foods section. Defrosted.
Spray casserole dish/dishes with Pam or cooking spray of your choice. Add cut up pieces of fish, then layer on your scallops,  and lastly the uncooked shrimp
sprinkle with black pepper
In a bowl...mix 1 can of Campbell's Cream of Shrimp soup, 1/4 cup milk, finely chopped onion and celery. Mix well. Pour on top of the seafood.
Melt a couple of tablespoons butter or margarine, the add 1/2 sleeve Ritz crackers or 1 sleeve of the short stack size Ritz crackers. Sprinkle this mixture on top of soup covered seafood.
Preheat oven to 350, and then bake 3o minutes or until the Ritz crackers brown up and the mixture is bubbly. There will be a lot of liquid in the casserole from the seafood and sauce. I like putting the liquid on top of a baked potato or mashed potatoes. Depending on how many you want to serve you can cut or add more seafood.

I've neglected my blog for ever so long

Lot's has happened since I last wrote on my blog.

1.My niece Kelly is getting married at the end of June, and she was given a lovely bridal shower by her sister, Trish. The shower was held at the Monponsett Inn, Halifax, MA. A mouth watering dinner was served to all the guest. Lovely tulips were on each table and one lucky person from each table got to bring the plant home.

Kelly and Geno received so many lovely gifts, and it took several vans to get everything to her parent's house after the shower.

2. I gave a 90th birthday party for my Mom at my parents home. IMa 90th birthday party2. 4.27.2013 

3. I started Weight Watchers and started walking 1 1/2 miles a day. So far I have lost weight each week and I am noticing my clothes are getting loose on me. Yeah!!!

4. BIG NEWS!!!!..we have a new granddaughter...Samantha Lynn. Sammi was born on May 3rd, weighed 7 pounds 9 ounces and was 19 1/4 inches long. The photo below was taken a few hours after she was born. I couldn't believe how alert she was and her eyes were open the whole time I visited.

6. Sunday was Mother's Day at Steven and Robin's. Steven prepared Steamed lobsters, homemade clam chowder, clams casino, BBQ pork, hot dogs, hamburgers and pasta salad. I made a seafood casserole. I will share that recipe in another post. Everything was delicious. Since I started WW's there has been a party every weekend, but I've been good.

The spring flowers are just beautiful this spring. The Mollis azalea's just started to open. The lilacs are in full bloom and smell heavenly.

Lots of beautiful birds have arrived..bluebirds, orioles, cardinal, goldfinches, woodpeckers and so many others have been coming to the yard.
