Cranberry Coconut Squares Recipe



I found this cranberry recipe the other day that someone posted on Facebook.  Since, I still have fresh cranberries in the refrigerator I thought I would try making the squares.
I measured out everything, fresh squeezed 2 lemons to make the 1/4 cup of lemon juice. I prepared all the ingredients and then...couldn't find the bag of coconut that I thought I had bought before Christmas. Urrgh!!!
So, I continued with the recipe without the coconut. The bottom layer you press into the pan, and bake for 10-12 minutes, and it is like a shortbread. The first pan I grabbed was a 9 x 9 inch pan, so that is what I used.
I could hardly wait for the pan to cool so we could taste test the squares. Both Tom and I thought the baked squares were really yummy. I will definately make this recipe again after my next trip to the grocery store and I get some coconut.

I would think if you didn't have fresh or frozen cranberries you could use canned or homemade whole berry sauce in this recipe. I will also try making this recipe with some of the whole berry cranberry sauce I made this fall.

P.S..Saturday, January 4, 2014...this morning I brought some of these cranberry squares to my parents. My Dad loved them and told me they are one of the best cranberry pastries he's ever eaten.  My Dad has was a cranberry grower for many years and has eaten cranberries numerous ways. I was glad that he enjoyed them.
