I finally got to make my pineapple jam before my fresh pineapples spoiled. I had bought the pineapples last week before my Dad ended up in the hospital.
I searched the internet and couldn't find a recipe that I really liked. Most recipes called for canned, crushed pineapple or had other fruit mixed with the pineapple. I just wanted plain old pineapple jam using fresh pineapple. I didn't know how many pineapples I would need to get a quart of crushed pineapple, so I had bought 3. I will cut up the extra pineapple for us to eat.
I found a recipe for cooked pineapple jam. It took 2 pineapples, cored, seeded, and then crushed in the food processor. There was about 1- 1/2 cups of extra pineapple than what the recipe called for, so I adjusted the rest of the ingredients. I cooked the pineapple, sugar, pectin mixture longer to get it thickened. The batch came out good. Since I still have 1 pineapple left, I am going to buy one more to make another batch.
The batch made 4-pint jars and 8- 1/2 pint jars. I still want to make blueberry jam. If I find blueberries on sale, I will make a batch of jam. I will have a nice assortment of jams to give as Christmas gifts.
